- 4 kaffir lime leaves
- 3 coriander roots
- 2.5 cm (1 inch) piece of galangal
- 2 lemon grass stalks
- 2 tbsps garlic
- 2 tsps vegan (shrimp) paste or 2 tsps soya bean paste
- 1 tsp coriander seeds
- 1 tsp white pepper
- 1 tsp salt
- 1/2 tsp cumin seeds
- Sauce
- 3 kokum
- 1 tin coconut milk
- 2 tbsps the red curry paste
- slices Small marrow, peeled and deseeded and cut into bit size
- 1 tbsp palm sugar
- Large handful of sorrel, roughly chopped
- 2 red chillies, sliced
- 4 small kaffir lime leaves, shredded
- Handful seaweed
- 1/2 lime, juiced
Steps to make to make MAFS - Marrow at First Sight
- Using a pestle and mortar crush all the paste ingredients. There should be around 4 tablespoons.

- Wash the kokum and cover with 50ml hot water and set aside. If using dried seaweed, rehydrate by placing in hot water. Heat 3 tablespoons of the creamy part of the coconut milk in a pan. Add the curry paste and stir to combine.

- When the oil from the milk separates, add the marrow, rest of the coconut milk, palm sugar and kokum with its water. Cover and cook for 8-10 minutes until the marrow is soft and the sauce has reduced.
- Pick and wash the sorrel, chillies and lime leaves and add with the rehydrated seaweed. Add the lime juice and stir to combine. Remove the kokum, taste and adjust with sugar and lime juice. Let the flavours mingle in the pot for a few minutes before serving with jasmine rice.
